Luscious Chocolate Soy Milk Smoothies

Summer is the time of icy grande drinks, milkshakes and smoothies, but most of the decadent drinks out there are dairy based, leaving few choices for the lactose intolerant or vegan sippers. Worry no longer for your cravings can be assuaged in less than 15 minutes.

I find Silk, Westbrae and Vita Soy brands to have the creamiest after taste without the beaniness that some people fear when tasting soy milk for the first time. You can use the chocolate, vanilla, or plain flavors in the following shakes, and omit the soy ice cream if you don't have any around. I must admit that the soy ice cream indeed adds that extra touch of naughty decadence.

These shakes make approximately two generous servings

Chocolate espresso Frappuccino style smoothie

  • 1/4 cup cocoa (I like the unsweetened Dutch processed variety for the best flavor)
  • 1 cup soy milk (vanilla, chocolate or plain)
  • 1 cup soy ice cream (I like Soydelicious, Turtle Mountain and Double Rainbow brands the best)
  • 4 tablespoons instant espresso powder or a shot or two of espresso
  • 1 teaspoon vanilla extract

Blend everything until smooth–like the consistency of a Frappucchino that you've been wanting to order at Starbucks.

Chocolate mint shake

  • 1 cup soy milk (vanilla, chocolate or plain)
  • 1 cup soy ice cream
  • 1/4 cup store bought chocolate syrup
  • 1/2 to 1 teaspoon mint extract
  • crushed pepper mint candy or York's Peppermint Patty bits, Newman O's as a garnish (optional)

Blend everything except for the candy bits in a good smoothie maker until smooth. Decorate with candy or cookie bits for those special days.

Chocolate, banana and peanut butter shake

When you can't decide between Reese's Cups or a banana split, this one is your saving grace.

  • 2 frozen bananas
  • 2 cups soy milk (vanilla, chocolate or plain)
  • 1/4 cups cocoa powder or store bought chocolate syrup
  • 2 tablespoons peanut butter

Blend everything until smooth. Garnish with crushed Newman's Own or other organic peanut butter cups if you like.
